Exotic Bowl with Dragon Fruit and Lychee

I’ve always been fascinated by color. I was a bit of an artist as a kid, and I loved to draw. The colors on our plates are just as important as the colors that surround us; they set the tone and grab our attention. Serves 2. 

Ingredients
2 cups plain Greek yogurt 
1 cooked beet, diced
½ cup fresh or frozen raspberries
¼ cup  grapefruit juice 
2 kiwi fruits, diced
4 lychees
½ mango
½ pitahaya (dragon fruit)
2 tablespoons goji berries
2 tablespoons shelled unsalted pistachios 
2 tablespoons unsalted pumpkin seeds

Directions
In a food processor, combine the Greek yogurt, beet, raspberries, and grapefruit juice, and process until the mixture is smooth.

Divide between two bowls, then top with the rest of the fruit, pistachios, and pumpkin seeds.
